Additional Notes : Thanks to the unusual processing method this coffee has quite a fruity floral note that is more usual for the natural process. Those horrified by funky notes may well find this a lovely introduction into the variety coffee has to offer.
This crop is grown in the highest growing area of Chiapas, in the Chimhucum "Two rivers" region. The population is 100% indigenous Mayan, and these small holders prioritise social and environmental practises on their farms, protecting the unique microclimate that makes this coffee so special.
Using special artisan processing methods such as hand de-pulping and sun drying, this crop of Mad Mash is particularly unique. The beans are semi-washed, meaning the fruit is partially fermented for 6 to 12 hours before washing and processing, create its distinct and funky profile.
